This isn’t just another recipe blog. The goal here is not to learn how to follow a recipe, but how to cook. The recipes are not intended to be followed to the letter, and several alternatives and embellishments are recommended in each recipe. Look for “The Basics” in every recipe to get an idea of what is necessary and what can be omitted or altered.
These recipes are designed to be made at home. When you don’t cook in a commercial kitchen with a stocked pantry, sometimes you need to improvise. Most people don’t keep a can of chipotles in adobo sauce that a recipe calls for. Maybe someone you’re cooking for is allergic to dairy, or is sensitive to spice. That doesn’t mean you can’t play with the recipe and make it fit your life!
Aside from our regularly updated recipes, we also post several lessons and how-to’s each week and offer advice on how to shop, how to stock your kitchen, and what substitutions can be made for common ingredients in cooking.
